Ponzu Sauce

Ponzu Sauce

A light soy sauce made with Yuzu to give it nice citrus overtones

Equipment

  • 2 quart sauce pan

Ingredients
  

  • 2 cups soy or tamari
  • 1.5 cups mirin
  • 1 cups vinegar
  • 1 cups dashi
  • .5 cups Yuzu
  • 1 kombu leaf

Instructions
 

  • add all ingredients to sauce pan and bring to a slow rolling boil for 5 minutes.
  • cover and set aside to allow to cool
  • remove kombu leaf and serve
