Ponzu Sauce
A light soy sauce made with Yuzu to give it nice citrus overtones

Cook Time 1 hour hr
- 2 cups soy or tamari
- 1.5 cups mirin
- 1 cups vinegar
- 1 cups dashi
- .5 cups Yuzu
- 1 kombu leaf
add all ingredients to sauce pan and bring to a slow rolling boil for 5 minutes.
cover and set aside to allow to cool
remove kombu leaf and serve
