Like with the nori there are grades of soy sauce available but not all are organic. The standard organic you’ll find at the grocery store is always kept on hand. But some of the better grade soy can really set a sauce or a dish off. The gallon Soy available for natural grocers runs about $48. So don’t leave it out for everyone to slur down over-dunking their nigiri.
